Our Story
Chris Chavez and Suzi Vargas, co-owners of Uncle’s Fixins in Durango, Colorado, bring a vibrant blend of tradition and innovation to the local food scene. Originally from Albuquerque, Chris grew up savoring aguas frescas and developed a passion for crafting them from scratch using hand-picked organic fruits and Zulka Morena sugar cane—a natural, unrefined sweetener that reflects his commitment to quality. Suzi complements the operation with her flair for comfort food and community connection, helping shape a menu that ranges from spicy elote and loaded potatoes to homemade ice cream bars. Together, they’ve created food truck offerings that are more than just a meal—it’s a nostalgic experience rooted in flavor and culture.
Their culinary philosophy is simple: elevate everyday favorites with bold ingredients and heartfelt preparation. Whether it’s pressing fresh fruit for the day’s agua fresca or layering cotija cheese and Valentina hot sauce on a cup of corn, Chris and Suzi infuse every dish with care and character.
